Before first use, wash your pan with warm water and detergent and dry thoroughly; then season the pan by coating it with a thin layer of high-heat resistant oil to enhance its natural non-stick properties, and bake it in a 180°C oven for 1 hour. During use, slowly heat the flat side over the stove for pancakes and the ridged side for grilling over medium heat; to bake pizza or cook food in the oven, be sure to remove the removable handle and place the pan in the oven. To clean, wash the pan with a stiff brush while it is still hot (never use a dishwasher), dry it completely after washing, and store it lightly oiled to prevent rusting; always use oven mitts as the cast iron pan will be very hot.
